Weekend Kettle Eggs

Ingredients
  • 1 Tbsp. butter
  • 1 small onion (finely chopped)
  • 1 small garlic clove (minced and mashed into a paste with salt to taste)
  • ½ Tsp. fresh ginger (finely shredded)
  • 2 or 3 fresh green arbol, Thai, or serrano chiles (finely chopped)
  • ½ cup cilantro (roughly chopped)
  • 2 cups Dakota Style Original Kettle Chips (Crushed)
  • 4 eggs
  • Sea salt to season
Method
  1. Heat butter in a sturdy, well-seasoned medium frying pain, preferably cast iron, over medium heat.
  2. Add onion and cook, stirring occasionally, until softened and just beginning to brown. Stir in garlic paste, ginger, and chiles.
  3. Stir for a moment or two, then add cilantro.
  4. Crumble in Dakota Style Original Kettle Chips, tossing or stirring the contents of the pan to combine them thoroughly.
  5. Make 4 open circles on the surface of the kettle shake mixture and crack an egg into each one. Pour 1 Tbsp. water down the inside edge of the pan to generate some steam.
  6. Cover skillet tightly and reduce heat to low. Let eggs steam just long enough to set white (6 to 8 minutes; gently touch one with a spoon to see if it’s done the way you like it). Season to taste.
